{"id":38,"date":"2013-10-30T15:54:00","date_gmt":"2013-10-30T15:54:00","guid":{"rendered":"https:\/\/gobananaelaine.wordpress.com\/2013\/10\/30\/vegan-shepherds-pie"},"modified":"2020-12-10T02:26:00","modified_gmt":"2020-12-10T02:26:00","slug":"vegan-shepherds-pie","status":"publish","type":"post","link":"https:\/\/www.elainekwok.com\/lunchlainey\/2013\/10\/30\/vegan-shepherds-pie\/","title":{"rendered":"Vegan Shepherd&#8217;s Pie"},"content":{"rendered":"<div class=\"separator\" style=\"clear:both;text-align:center;\"><a style=\"margin-left:1em;margin-right:1em;\" href=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2016\/04\/56d5b-shep-pie.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2016\/04\/56d5b-shep-pie.jpg?w=300\" width=\"400\" height=\"298\" border=\"0\" \/><\/a><\/div>\n<p>Fluffy potatoes, stewy stuff, what&#8217;s not to love?<br \/>\nNote, I use real butter in this recipe, but it&#8217;s easy to substitute with vegan margarine.<\/p>\n<p><b>Ingredients<\/b><\/p>\n<ul>\n<li>1\/4 cup carrot, diced<\/li>\n<li>1\/4 cup celery, diced<\/li>\n<li>1\/2 onion, diced<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>about 10 mushrooms, chopped small (I used white button mushrooms)<\/li>\n<li>1 can brown lentils, drained<\/li>\n<li>4 red skinned potatoes<\/li>\n<li>1\/4 cup or so vegan cheese, shredded<\/li>\n<li>butter<\/li>\n<li>soy milk<\/li>\n<li>salt<\/li>\n<\/ul>\n<p><b>Let&#8217;s do it!<\/b><br \/>\nPotatoes:<\/p>\n<ol>\n<li>Scrub the potatoes, pierce them and put them in a microwavable dish with some water in it. Microwave them until they&#8217;re cooked (all microwaves are different, mine took about 14 minutes). If you don&#8217;t like microwaves, you can boil them, too. Or roast them, but that takes FOREVER.<\/li>\n<li>Mash them up, adding butter, soy milk and salt until you reach a creamy, easily spreadable consistency.<\/li>\n<li>Mix in vegan cheese.<\/li>\n<\/ol>\n<p>Filling:<\/p>\n<ol>\n<li>In a pot, melt butter on medium heat.<\/li>\n<li>Add carrots, celery and onion, stir until onion is translucent.<\/li>\n<li>Add garlic and mushrooms and stir until it looks cooked.<\/li>\n<li>Add lentils and cook until the flavours have melded well.<\/li>\n<li>Add salt to taste.<\/li>\n<\/ol>\n<p>Put it together:<\/p>\n<ol>\n<li>Put the filling in a high casserole dish (mine was about 12&#8243; x 7&#8243; and 4&#8243; high). Spread flat.<\/li>\n<li>Top with potatoes and spread flat.<\/li>\n<li>Place in the oven on a high broil and watch it until it turns golden brown. I wouldn&#8217;t walking away, as you don&#8217;t want to burn the thing.<\/li>\n<li>Let cool a bit before handling.<\/li>\n<\/ol>\n<p>That&#8217;s it!<\/p>\n<p><b>Lunch it up!<\/b><br \/>\nPut it in the fridge overnight and slice it up into portions the next day when it&#8217;s cold and sticks together better. I suppose you could serve this with a salad, but I just brought about 3 servings with me to eat throughout the day at work.
