That&#8217;s why I fill my pantry with items that can easily be turned into a balanced meal with very little effort. Something I always keep around are udon noodles. You can find them in Asian grocery stores in the noodle aisle (for those who haven&#8217;t been to an Asian grocery store, yes, there is usually an aisle that&#8217;s JUST NOODLES). The ones I buy\u00a0 can be ready to eat after a couple of minutes in the microwave or on the stove.<\/p>\n<p>The morning of this lunch, I was feeling particularly uninspired to cook. I basically just threw everything into my lunch bag and put it together at work.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 package udon noodles<\/li>\n<li>1\/2 package egg tofu (or just soft tofu if you don&#8217;t eat eggs)<\/li>\n<li>1 tbsp light soy sauce (or whatever soy sauce they have, if you&#8217;re not going to an Asian grocery store where there are a billion types)<\/li>\n<li>1 tbsp smooth peanut butter<\/li>\n<li>1\/2 tsp sesame oil<\/li>\n<li>1 tbsp bonito flakes (optional, and a no-go for vegetarians)<\/li>\n<li>A side of veggies, in this case, homemade kimchi<\/li>\n<\/ul>\n<p><a href=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-345\" src=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420-300x200.jpg 300w, https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420-768x511.jpg 768w, https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420-960x640.jpg 960w, https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420-451x300.jpg 451w, https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/02\/DSC0420.jpg 1000w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h2>Let&#8217;s do it!\/Lunch it up!<\/h2>\n<ol>\n<li>Put the peanut butter, soy sauce and sesame oil in a tight-lidded jar. Pack everything else up and bring it to work.<\/li>\n<li>Once you&#8217;re ready to eat, slice the egg tofu into 1\/2 inch rounds. You will need a sharp knife to pierce through the package. If you&#8217;re like me, you keep a sharp knife and a cutting board at work. If you&#8217;re not like me, you can do this at home, so you&#8217;re not left with half a tube of tofu at work. You can also eat the whole thing. I&#8217;m not judging you.<\/li>\n<li>Put the udon and egg tofu into a large bowl and cover with hot water. Microwave for about 3 minutes, until the noodles are the softness that you like them at.<\/li>\n<li>Drain the water.<\/li>\n<li>Shake the sauce jar until it&#8217;s well mixed, then pour over the noodles and tofu.<\/li>\n<li>Mix well and top with bonito flakes. Not only do they make it look really nice, but they add some complexity and fishiness to the dish.<\/li>\n<li>Eat with some veggies on the side, in this case, homemade kimchi that required no heating up or anything.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>There are days that I really don&#8217;t feel like cooking.
