The ingredients are simple: broth, elbow macaroni, some meat (leftovers from dinner or Spam), some veggies (whatever&#8217;s around). Sometimes she would fry an egg and put that on top. Eating this makes me relive afternoons watching reruns of Who&#8217;s the Boss under a blanket in the middle of the day. Which is basically what heaven looks like for busy adults.<\/p>\n<h2>Ingredients<\/h2>\n<p>Serves 1<\/p>\n<ul>\n<li>1.5 cups of <a href=\"https:\/\/www.elainekwok.com\/lunchlainey\/2018\/01\/14\/basic-bone-broth\/\" target=\"_blank\" rel=\"noopener\">broth<\/a>\u00a0(click to see my recipe)<\/li>\n<li>1 serving of elbow macaroni, cooked according to package<\/li>\n<li>1 serving of some kind of meat (leftover bbq duck in the photo)<\/li>\n<li>1 serving of some kind of green veggies (swiss chard in the photo)<\/li>\n<\/ul>\n<h2>Let&#8217;s do it!<\/h2>\n<h3>At home:<\/h3>\n<ol>\n<li>Heat the broth to a low simmer on the stove.<\/li>\n<li>Add the meat and veggies to the broth until heated through, maybe 3 minutes.<\/li>\n<li>Add the macaroni and heat through for 1 minute.\n<p><figure id=\"attachment_316\" aria-describedby=\"caption-attachment-316\" style=\"width: 355px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/01\/DSC0404.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-316\" src=\"https:\/\/www.elainekwok.com\/lunchlainey\/wp-content\/uploads\/2018\/01\/DSC0404-300x199.jpg\" alt=\"\" width=\"355\" height=\"229\" \/><\/a><figcaption id=\"caption-attachment-316\" class=\"wp-caption-text\">Do not give into the beseeching looks from the dog.<\/figcaption><\/figure><\/li>\n<li>Pour this all in a bowl and eat. Seriously, that&#8217;s it.<\/li>\n<\/ol>\n<h3>At work:<\/h3>\n<ol>\n<li>While cooking the pasta, blanch the veggies in the water for the last minute. Put these into a container. Place the meat and the soup in a separate, spill-proof container. I keep a large soup bowl at work for this specific type of thing. I also keep cutlery, a little bottle of fish sauce, hot sauce, olive oil and vinegar but THAT&#8217;S NOT IMPORTANT RIGHT NOW.
